Shrimp Scampi with Sun-Dried Tomatoes

  • 1 tbsp olive oil
  • 1 lb large shrimp, peeled & deveined
  • 1/4 cup green onions, minced
  • 2 tbsp garlic, minced
  • 1/4 cup dry sherry
  • 2 tbsp oil packed sun-dried tomatoes, drained, & chopped
  • 1 tbsp lemon juice
  • 2 tbsp butter
  • 1 tbsp fresh parsley, chopped
Heat oil in skillet to hot.  Add shrimp and cook, stirring until shrimp turns pink on the outside, approximately 3 minutes.  Remove shrimp to plate and cover to keep warm.  Add onions and garlic to pan and cook for 1 minute.  Add sherry, tomatoes, and lemon juice.  Bring to a boil and cook to reduce liquid to 1 tbsp.  Remove from heat and add butter and parsley.  Add shrimp and heat.
