| Heat oil in skillet to hot. Add shrimp and cook, stirring until shrimp turns pink on the outside, approximately 3 minutes. Remove shrimp to plate and cover to keep warm. Add onions and garlic to pan and cook for 1 minute. Add sherry, tomatoes, and lemon juice. Bring to a boil and cook to reduce liquid to 1 tbsp. Remove from heat and add butter and parsley.
