1 lb Breakfast Meat (Sausage, Bacon, Ham or any combination)
8-10 Eggs
Green Pepper
Onion
1 lb (or more) shredded Colby-Jack cheese (the cheesier, the better)
Flour Tortillas
| Optional Ingredients: Salsa, guacamole, sour cream, jalapenos, hash browns |

Brown breakfast meat and cut into bite-size pieces.
Remove meat from pan, leaving the drippings. Cut
up green pepper and onion and lightly fry in the drippings.
When the pepper and onion are done, drain MOST of the drippings. (If you
leave a little, it enhances the flavor) Add meat back into pan and add
the eggs. Break egg yolks and mix together. Cook over medium heat until
eggs are just about done. Add cheese and stir together. Heat over low
heat until cheese melts.
Open the bag the tortillas come in, and lightly re-close (do not seal). Heat entire bag in microwave for 1-2 minutes until tortillas are soft and hot. Place a scoop of the egg mixture in the center of each tortilla, along with any optional ingredients, fold closed and enjoy. Makes about 10 burritos |
